We love stretching our boundaries and trying not only new cuisines, but also different proteins. Here we took on kangaroo. Out local butcher @lil_miss_butcher carries unusual meats and we were immediately drawn to the kangaroo. The meat is very lean so we mixed it with ground beef to increase the fat content.
We used some wattleseed, which we were told is a native Australian spice. For the overall recipe, we followed a traditional sloppy joe. The addition of a cheesy bun just brings everything together.
INGREDIENTS 1/2 medium onion, diced 2 cloves garlic 3/4 # ground kangaroo 3/4# ground beef 3 roma tomatoes, diced 1 T wattleseed 1 T mustard 1 T molasses 1 T balsamic vinegar 8 oz tomato sauce 8 hamburger buns 2 c shredded cheddar cheese
DIRECTIONS 1. Mix kangaroo and beef in a medium bowl. 2. Heat oil in large saucepan until shimmering. Add garlic and onion. Heat until fragrant. Add meat mixture, breaking up and cooking until browned. Add bell pepper, tomatoes, wattle seed, mustard, molasses, vinegar and tomato sauce. Simmer 20 minutes. 3. In a medium hot skillet, toast buns and set aside. Lay a thing layer of cheese (the size of the bun). Cook until bubbly. Lay the top bun down and cook another 30 seconds. The cheese should stick to the buns. 4. Assemble in normal Sloppy Joe style and top with any condiments you prefer.
