Mediterranean Dogs



Who doesn't enjoy a meal outside during the summer? Someting about eating the sunshine just makes you happy. Since the beginning of the pandemic, I have been working from home. I can go days without leaving the house. Eating a meal outside makes it me a little less stir crazy.


We used out new found favorite, brisket dogs and cooked them wrapped in bacon on our outdoor flat top griddle. It's extra nice as it allows us to cook all of the components at the same time which makes for a super quick weeknight meal.



INGREDIENTS 1 small eggplant, peeled and diced 2 cloves garlic 1/2 yellow onion, diced 1/2 red bell pepper, diced 1/2 c kalmata or castlevetrano olives 1 T balsamic vinegar 5 strips bacon 5 brisket hot dogs 5 hot dog buns optional: parsley parmesan

DIRECTIONS 1. Mix topping ingredients together and cook on flat top or skillet until soft. 2. Wrap bacon around hot dogs. Griddle or grill until all sides are brown. Set aside. 3. Toast buns 4. Assemble; place bacon wrapped hot dog on and top with eggplant mixture. 5. Sprinkle with shredded parmesan and chopped parsley if desired.
