Eggplant Salsa

Another use for eggplant. Sometimes we really push the boundaries and the results are just ok, this is not one of those times. We were shocked at how good this was. It can be used as an appetizer, served as a condiment or added into dishes for extra flavor. I made a big batch and canned it for future use. I am sure some day I will not be pulling a million eggplant of the plant every week (at least I hope so).


INGREDIENTS 4 c eggplant, roasted and dices 1 c corn, roasted 1/2 c mixed peppers, roasted 3 c tomatoes, chopped 2 cloves garlic 1/4 c chopped cilantro 1/2 lime, juiced

DIRECTIONS 1. Mix all ingredients in a bowl, season with salt and pepper. 2. Let sit for two hours before serving. *choose peppers based on personal heat tolerance
